Moving the site and files to new root directory

Hi, I've been trying to move my site and have unfortunately can not access anything anymore ! Panicking slightly !! Origanlly we were building the site in; www.elementary-agency.com/elementary but wanted to move it to the root directory; www.elementary-agency.com So I backed up all the files to my harddrive, then mistakingly deleted all the files out of the root directory, before changing the URI in the interface before uploading the files. I've been trying to undertsand how to create a Symlink, but am struggling a little. Has this happened to anyone ? any suggestions would be great, and let me know if you need any further info.
