So the main site is set to "two sidebars on right" however I want Single Post Pages to be "one sidebar on each side".

Go to PlatformPro settings in the admin. Set up the layout on "Layout Editor" to "one sidebar on each side". Then choose a different layout on every page you create. For the category and archive pages I think you need to make a customized "category.php" file.

Yes! Thank you. The answer was right in front of me of course. For those in need of different wording here: The idea is that there are TONS of single post pages (blog posts) right? So you don't want to have to change the layout of every single one of these. So the answer is to change your default layout to suit the blog posts, NOT the home page or other static pages.
