Potentially a silly question but ... what does choosing to "enable Facebook Open Graph data" really get for me? Why would I want to do this?

Sorry Danny, I'm not blond but feeling like it this morning. I'm not entirely following you. Can you give me an example? Is this helping to connect my WP property to my Facebook property or to associate my users profile's with their profiles on WP? Remember, speak slowly and loudly. ;^)

It doesn't do either of what you described. :) It's actually described in more detail here: http://developers.facebook.com/docs/opengraph/keyconcepts/#mechanics

It basically makes shared posts and pages look better on Facebook. The screenshots shown here provide a good example of how it works: http://wordpress.org/extend/plugins/facebook-open-graph-meta/screenshots/ I wish we had information in our Wiki on this but it's not there yet. :(
