Set Default post category

Is it possible to set a default post category so that any users post will have that category unless they actively choose another one?

You can actually change the name of "Uncategorized" to anything you wish in the Categories settings. Look in the Dashboard > Posts > Categories and edit "Uncategorized", renaming it to your choice. This way, by default, the posts added by other users will be in that category even if no other one is selected.
