How can I control the blog page?!

The page is sidebar left...which is fine...but there is no "edit page" tag for this page...nor is there met settings in page: "Note: Individual page settings do not work on the blog page (use the settings panel)." So I cant put boxes or choose side bar left or full width etc... So I got to Post Settings - yes I can change sidebar left etc... but not sure how to change content in sidebars (my sub menu becomes weirdly hidden?). For example in primary sidebar I have sub menus in the left...but on knowledge this goes? I want a mirrored drop down menu showing "sub news/catgories" I want similiar to this: http://www.morganlovell.co.uk/office-design-news/staff/ But where as I have a sub menu appear in primary sidebar in these pages: http://www.businessinteriors.co.uk/betatest/wordpress/office-furniture It seems to disappear in my blog: http://www.businessinteriors.co.uk/betatest/wordpress/knowledge'>http://www.businessinteriors.co.uk/betatest/wordpress/knowledge ...and i want lots of sub categopries below Knowledge that arent blog pages... hope this makes sense!

The sidebar content can be controlled using widgets in Widgets > Appearance.
...and i want lots of sub categopries below Knowledge that arent blog pages... hope this makes sense!
If you want subcategories, you can create subcategories, but since don't them to be "blog pages" I suppose they can be subpages instead (child pages that belong to parent pages).

So I am having a similar problem. What I want to do is set the default layout to not have any sidebars at all. Then the only page that should have sidebars is the blog page. Is this possible? --- 30 minutes later I figured it out. Disregard this post.
